Like Butter

In the center of the fruit is a seed like a peeled chestnut. And between this and the rind is the part which is eaten, which is abundant, and is a paste similar to butter and of very good taste. Oviedo, historian to the conquistadores, wrote these words in 1526 to describe his first encounter with the avocado along the north coast of Columbia. This depiction gives much more insight into the creamy beauty of this native Mexican fruit than all the avocado green appliances of the 1960s

This painting appears in the 2005 Food For Thought calendar.
